As promised, here is the recipe for the "zesty nut balls" served on the last LHS yin yang yoga retreat. This raw, gluten and dairy free healthy snack is super quick and easy to make, plus they taste delicious!
100g mixed nuts (I used cashews, almonds and walnuts)
1 tbsp coconut oil
10 dried pitted dates
Zest of 1 unwaxed lemon (I strongly advise you buy an organic lemon as standard lemons will be heavily sprayed-making for a not so tasty zest)
1 tbsp raw chia seeds
2 tbsp desiccated coconut
Pinch of Himalayan salt (I also make these for my 11 month old without the salt and he loves them)!
Place all ingredients into a food processor, blitz until the ingredients stick together.
Roll into small balls, (I made 18). Voila!
These will keep well in an air tight container in the fridge for up to a week, or freeze them up to a month.
